Banana Bread Cake

My family are not big fans of bananas, however I was keen to try to bake it when I saw this banana bread cake. I used to bake pancakes for my daughter using mashed bananas instead of sugar. Nowadays, I totally omit the mashed bananas. This is good for Sunday brunch. Please eat this with your lovely family.


バナナを好まない我が家。子供が小さい頃は、バナナを砂糖代わりにして、パンケーキなどを焼いた記憶があるけれど、今では遠い昔。バナナが熟れるのを今か今かと待ちながら焼きました。アメリカでは朝ご飯にも食べる人がいるらしいです。日曜の朝とかにいいかもですね。


(Tips)
・Try to bake it the day before you want to eat. Leaving one day in the fridge makes the cake moister. If you like warmer bread, you can put it in the microwave a bit before eating.
・Butter and egg should be room temperature.
・Make sure your bananas are ripe. If they aren’t yet, you can sprinkle powdered sugar on them when you eat.
・You can use all-purpose flour, plus 1Tbsp of cornstarch if you don’t have cake flour.

《Ingredients》
・80g unsalted butter (room temperature)
・90g brown sugar or coconut sugar
・1 egg (room temperature)
・150g cake flour or all-purpose flour + 1 Tbsp cornstarch
・1 tsp baking soda
・1/4 tsp baking powder
・1 tsp ground cinnamon
・A pinch of salt
・2 bananas (200g)
・1 Tbsp rum (optional)
・35~40g roasted walnuts or pecan nuts
・Chocolate chips (optional)
・powdered sugar(optional)

《Instructions》

  1. Preheat the oven to 356F (180c) and grease a 4×8-inch loaf pan or coat with nonstick spray. Sift all the powder ingredients together (flour, baking soda, baking powder, ground cinnamon, salt) and set aside.
  2. Mash the ripe bananas with a fork until completely smooth. 
  3. Beat the butter and brown sugar together with a handheld or stand mixer.
  4. Add the eggs, beating well. Add half of the dry ingredients, mix with a rubber spatula. And then, add the remaining dry ingredients and mashed bananas, and mix. To ensure your banana bread cake comes out soft and fluffy, make sure you don’t overmix.
  5. Add roasted walnuts or pecans and chocolate chips if you want.
  6. Spoon the batter into the prepared loaf pan and bake for 45-50 minutes. A toothpick inserted in the center of the loaf will come out clean when the banana bread cake is done.
  7. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack. Wrap it tightly to prevent it becoming dry and put it in the fridge overnight.
